Pinca – Traditional Croatian Easter “sweet bread” – “Pan dolce” Pasquale dalla tradizione Croata


On the Easter morning we use to have a special breakfast feast with sweet bread, coloured eggs, ham and sping onion. There is a kind of egg-battle before we start to eat. Everyone should choose one egg and hit the egg of another tablemate. The winner is the one that remains with his egg intact. This custom is very interesting to children, but also adults get fully involved in it and there are always a lot of laughter and joy around the table.
The sweet bread go very well together with the ham, but after Easter I also like to eat it for breakfast with a cup of coffee. I find it tasty if lightly toasted and with thin spread of butter on it.

TRADITIONAL CROATIAN EASTER “SWEET BREAD”

100 gr wheat flour + 1 (or 2)tablespoon
150 gr wheat flour type “Manitoba” (superfine flour)
0,85 dl lukewarm milk
40 gr butter
2 eggs (use a part of it for the egg-wash)
50 gr sugar + 1 teaspoon of vanilla sugar
10 gr fresh yeast
1 pinch of salt

For filling and topping of the braid:
candied orange peels
sugar flakes

Dissolve the yeast and one teaspoon of sugar in 25 ml of lukewarm milk and let it rise for 10 minutes. Mix the flour, sugar and a pinch of salt in a bowl, add lightly beaten egg, sliced butter and the yeast. Start kneading the dough and add the remaining lukewarm milk little by little. If the dough should results too soft, add another 1 or 2 tablespoons of flour until you get the smooth dough. Cover the bowl and allow the dough to rest for about 1 hour in a warm place. The dough should double in size.

For the bread: give to the dough a nice spherical shape, cover the dough and let it raise for 30 minutes (on the baking tray covered with baking paper). Cut the cross shape on top of the dough and brush it with the egg-wash.

For the braid: place the dough on the floured surface and roll it into a rectangular shape about 0,5 cm thick. Sprinkle the candied orange peels over one half of the dough and cover it with the second half. Cut the dough into stripes, roll each stripe on itself and form a braid. Place the two end of the braid under the dough to get the nice shape. Cover the braid and let it raise for 30 minutes (on the baking tray covered with baking paper). Brush the braid with the egg-wash and sprinkle it with sugar flakes.

Preheat the oven to 180°C and bake the dough for 20 minutes until golden brown.




La ricetta in italiano
“PAN DOLCE” PASQUALE DALLA TRADIZIONE CROATA

100 gr di farina “00” + 1 (o 2) cucchiaio
150 gr di farina “manitoba”
0,85 dl di latte tiepido
40 gr di burro
2 uova (lasciare poco uovo sbattuto per spalmare la pasta)
50 gr di zucchero + 1 cucchiaio di zucchero vanigliato
10 gr di lievito di birra (1/4 cubetto circa)
1 pizzico di sale

Per il ripieno e la guarnizione della treccia:
scorzette di arancia candite
fiocchi di zucchero

Sciogliere il lievito e un cucchiaino di zucchero in 25 ml di late tiepido e lasciare lievitare per 10 minuti. In una ciotola mescolare la farina, lo zucchero e un pizzico di sale, e infine aggiungere l’uovo leggermente sbattuto, il burro a pezzetti e il lievito. Impastare a mano aggiungendo il rimanente latte poco alla volta. Se l’impasto dovesse risultare troppo morbido aggiungere 1 o 2 cucchiai di farina e lavorare l’impasto fino ad ottenere l’impasto liscio. Coprire la ciotola e far lievitare l’impasto in un luogo caldo per circa un’ora. L’impasto deve raddoppiare di volume.

Per il pane: formare una sfera e lasciarla lievitare coperta per circa 30 minuti (nella teglia ricoperta di carta da forno). Intagliare la pasta in cima a forma di croce e spalmarla con l’uovo sbattuto.

Per la treccia: stendere l’impasto su una superficie infarinata dandogli la forma rettangolare dello spessore di circa 0,5 cm. Cospargere la metà della pasta stesa con le scorzette d’arancia candite e coprire con l’altra metà dell’impasto steso. Tagliare l’impasto in 3 strisce, arrotolarle leggermente e formare la treccia. Sistemare le due code della treccia sotto la stessa per darle una forma ben definita. Lasciare lievitare la pasta coperta per circa 30 minuti (nella teglia ricoperta di carta da forno). Spalmare la treccia con l’uovo sbattuto e cospargerla con i fiocchi di zucchero.

Cuocere nel forno preriscaldato a 180°C per circa 20minuti fino a quando la pasta diventerà dorata.

PINCA

100 gr brašna “00” + 1 (ili 2) žlica
150 gr brašna “manitoba” (fino glatko brašno)
0,85 dl mlakog mlijeka
40 gr maslaca
2 jaja (ostaviti malo razmućenih jaja za premazivanje tijesta)
50 gr šećera+ 1 žlica šećera u prahu s aromom vanilije
10 gr svježeg kvasca
prstohvat soli

Za nadjev i posipanje pletenice:
ušećerene korice naranče
šećerne pahuljice

Otopiti kvasac i jednu žličicu šećera u 25 ml toplog mlijeka i ostaviti da se diže oko 10 minuta. U zdjeli promiješati brašno, šećer i prstohvat soli, dodati razmućena jaja, listiće maslaca i dignuti kvasac. Mijesiti rukama i malo po malo dodavati ostalo mlijeko. Ako je tijesto premekano dodati 1 ili 2 žlice brašna i umijesiti glatko tijesto. Pokriti zdjelu i ostaviti tijesto da se diže na toplom mjestu oko jedan sat da se udvostruči volumen.

Za pincu: oblikovati dignuto tijesto u kuglu i ostaviti da se diže pokriveno oko 30 minuta (na plehu prekrivenom papirom za pečenje). Zarezati površinu u križ i premazati tijesto jajetom.

Za pletenicu: dignuto tijesto razvaljati na pobrašnjenoj površini u oblik pravokutnika debljine oko 0,5 cm. Posuti po polovici tijesta ušećerene korice naranče te prekriti drugim dijelom tijesta. Izrezati na 3 dijela i lagano rolati trake te isplesti pletenicu. Podviti krajeve pletenice pod tijesto da se dobije lijep oblik. Ostaviti da se diže pokriveno oko 30 minuta (na plehu prekrivenom papirom za pečenje). Premazati tijesto jajetom i posuti šećernim pahuljicama.

Peći u zagrijanoj pećnici na 180°C oko 20minuti dok porumeni.
